I guess I'd put the blame on the amount of posts I read every day and the attitude towards new goblins, which is "You should do this". What they need is a proper education in gold making, they need to understand the process, and not learn about new sources, cause then every time a source dries up, a farm is nerfed, they come back here to ask the same question. "This died. What now?" or "I'm at 500k, what now?" And that's why I'm annoyed. But then again, to each his own, I'm not the one in need of help...
Professions have changed dramatically in Legion. While before you simply had to pay for recipes when you were in town, now the trainers as you to gather certain materials or defeat certain targets in order to unlock additional recipes. How can you profit from this new system? Well, to compensate players with the harder recipe unlocks, the developers have implemented a recipe rank system.

-Gameplay- Gameplay has largely been stripped down to be a shell of its former self. This trimming has been going on for several expansions, but now it's even worse. Classes only have so many buttons which has resulted in very little skill involved in PvE (even PvP is a faceroll for most melee, lacking any sort of depth and decision-making as it's pretty clear what buttons to press in any given situation) and it's become more of a gear check. This expansion gave zero new abilities to classes, only took them away.

All are used for some crafts still, and depending on your server you can profit solely by buying mats on the AH, doing your transmute CD, and reposting. Heck many don't even need transmute master to be viable. This can be especially good for those of us who have been playing continuously for years and as a result have alts, many of which that aren't even max level, that we used back then that can still be used.

Professions skills are split between expansions now, you'll have a separate skill bar for each expansion. This means you can level the new Battle for Azeroth skill tier without putting any point into any of the previous expansions tiers, you don't have to level Leatherworking with older materials to be able to craft the new BfA items. It is really, really a stark change of pace from WoD and Legion where just questing and killing things would result in at least a small but decent profit from a day's activities, typically of at least 1k and often 2k. But now to get that sort of return, I have to really focus on gold WQ's, not spend any money on anything that I don't absolutely have to, and do 45 minutes of Legion content.
There's a few profession crafted pets in BfA on the horizon - Battle for Azeroth Tailoring is getting a Hot Air Balloon style pet, and BfA Alchemy looks to be getting a brand new Transmute Meat to Pet. There are some mount buff consumables from both BfA Leatherworking in the form of a mount barding, and Blacksmithing in Battle for Azeroth will be able to craft Stirrups and Hoofplates to increase mount speed and allow you to interact with things while mounted.

In a few months only mats will be worth anything. At this point we have people with tens of millions of gold and people with just a few thousands. A flask takes tons of mats to make, and they will sell for well over 10k gold each, so the casual players won't afford them. When people realize that the rich guys will always take buying from the AH over farming their own mats, the prices will go even higher, then casuals will notice how expensive flasks are, and they will pick up alchemy and make more flasks, driving the prices down again.
